Orange Rosemary Halibut
with Spicy Roasted Broccoli
This recipe was seriously delicious and took about 5 minutes to prep each dish, and no more than 20 minutes to cook it all. Within 30 minutes we had an amazing dinner (healthy + yummy) on the table with minimal effort!
Halibut
Ingredients:
1 lb. Halibut Fillet (2 steaks)
2 TBSP Olive Oil
1-2 TBSP Rosemary (fresh preferably)
1 Medium Orange, sliced
4 Cedar Grilling Papers & Cooking String
Directions:
1. Soak the cedar papers in water for 5 minutes.
2. Place 1/4 lb. halibut fillet on each cedar paper. Drizzle each with olive oil.
3. Drizzle each fillet with olive oil. Sprinkle with rosemary. Salt & pepper to taste.
4. Place 1 orange slice on top of each fillet.
5. Wrap the paper around and tie closed with string.
6. Grill or bake over Medium-High heat (375-425 degrees F) for 10-15 minutes.
Broccoli
Ingredients:
1 lb. Broccoli
2 TBSP Olive Oil
2 TBSP Italian seasoning
1 TSP Red Pepper Flakes
Directions:
1. Pre-heat oven to 425 degrees.
2. Spread broccoli out on a cooking sheet and drizzle with olive oil.
3. Sprinkle Italian seasoning evenly over the broccoli. Sprinkle with red pepper flakes. Salt & Pepper to taste.
5. Bake for 15-20 minutes until cooked.
I'm telling you guys, this meal is serious DELICIOUSNESS! For me, it was an ideal choice for dinner on a busy day: Easy - Healthy - Quick .... my kinda meal!
